Mushroom Curry – Tikka Masala

For the Marinade:

  • 2 cups fresh mushrooms (button, portobello, or shiitake)
  • ½ cup plain yogurt (or coconut yogurt for vegan)
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • ½ tsp chili powder
  • 1 tbsp lemon juice
  • Salt to taste

For the Sauce:

  • 2 tbsp oil or ghee
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 cups tomatoes, pureed
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 1 tsp paprika
  • ½ tsp turmeric powder
  • ½ cup heavy cream (or coconut milk for vegan)
  • Salt to taste

For Garnishing:

  • Fresh cilantro, chopped
  • A drizzle of cream or coconut milk
  • Lemon wedges

Instructions

  • Prepare the Marinade:
    • In a bowl, combine yogurt, turmeric, garam masala, cumin, chili powder, lemon juice, and salt.
    • Add the mushrooms and coat them evenly. Let marinate for 20-30 minutes.
  • Cook the Mushrooms:
    • Heat a pan with a little oil. Sear the marinated mushrooms until golden brown. Remove and set aside.
  • Make the Sauce:
    • In the same pan, heat oil and sauté the onions until golden brown.
    • Add garlic and ginger, cooking for 1-2 minutes until fragrant.
    • Stir in the pureed tomatoes, garam masala, coriander powder, paprika, turmeric, and salt. Simmer for 10 minutes.
  • Combine and Simmer:
    • Add the cooked mushrooms to the sauce and simmer for another 5 minutes.
    • Stir in cream or coconut milk for a rich texture. Adjust seasoning if needed.
  • Serve:
    • Garnish with fresh cilantro and a drizzle of cream or coconut milk.
    • Serve hot with naan bread, basmati rice, or paratha.
