Made with simple ingredients like rice, milk, and sugar, this versatile dessert can be customized with spices, fruits, or nuts to suit any occasion. Serve it warm for a cozy treat or chilled for a refreshing twist.
Ingredients
Scale
- 1 cup short-grain or medium-grain rice
- 4 cups whole milk (or dairy-free alternative)
- ½ cup sugar (or preferred sweetener)
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon (optional)
- ¼ teaspoon ground nutmeg (optional)
- ½ cup raisins or dried fruits (optional)
- Fresh berries or nuts for garnish (optional)
Instructions
- Rinse the rice under cold water to remove excess starch.
- In a medium saucepan, bring 2 cups of water to a boil. Add the rice and reduce the heat, simmering until the water is absorbed.
- Slowly add the milk, one cup at a time, stirring constantly over low heat.
- Mix in the sugar and continue stirring to dissolve completely.
- Let the mixture simmer on low, stirring occasionally, until the rice is tender and the pudding thickens (about 20–25 minutes).
- Remove the saucepan from heat and stir in the vanilla extract.
- If desired, add cinnamon, nutmeg, or dried fruits. Stir well to combine.
- Allow the pudding to cool slightly before serving, or refrigerate it for a chilled version.
- Garnish with fresh berries or nuts before serving, if desired.
Notes
- For a creamier pudding, use short-grain rice as it releases more starch.
- To adjust sweetness, reduce or increase sugar according to taste.
- If the pudding thickens too much during storage, reheat with a splash of milk to restore the creamy texture.
- Variations include using coconut milk for a tropical flavor or adding cardamom for an Indian-inspired twist.
