For the Marinade:
- 2 cups fresh mushrooms (button, portobello, or shiitake)
- ½ cup plain yogurt (or coconut yogurt for vegan)
- 1 tsp turmeric powder
- 1 tsp garam masala
- 1 tsp cumin powder
- ½ tsp chili powder
- 1 tbsp lemon juice
- Salt to taste
For the Sauce:
- 2 tbsp oil or ghee
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1-inch ginger, grated
- 2 cups tomatoes, pureed
- 1 tsp garam masala
- 1 tsp coriander powder
- 1 tsp paprika
- ½ tsp turmeric powder
- ½ cup heavy cream (or coconut milk for vegan)
- Salt to taste
For Garnishing:
- Fresh cilantro, chopped
- A drizzle of cream or coconut milk
- Lemon wedges
Instructions
- Prepare the Marinade:
- In a bowl, combine yogurt, turmeric, garam masala, cumin, chili powder, lemon juice, and salt.
- Add the mushrooms and coat them evenly. Let marinate for 20-30 minutes.
- Cook the Mushrooms:
- Heat a pan with a little oil. Sear the marinated mushrooms until golden brown. Remove and set aside.
- Make the Sauce:
- In the same pan, heat oil and sauté the onions until golden brown.
- Add garlic and ginger, cooking for 1-2 minutes until fragrant.
- Stir in the pureed tomatoes, garam masala, coriander powder, paprika, turmeric, and salt. Simmer for 10 minutes.
- Combine and Simmer:
- Add the cooked mushrooms to the sauce and simmer for another 5 minutes.
- Stir in cream or coconut milk for a rich texture. Adjust seasoning if needed.
- Serve:
- Garnish with fresh cilantro and a drizzle of cream or coconut milk.
- Serve hot with naan bread, basmati rice, or paratha.
