Ingredients
Scale
- For the Vegetables:
- 2 cups of carrots, peeled and sliced
- 1 cup of broccoli florets
- 2 cups of sweet potato wedges
- 1 tablespoon of olive oil
- For the Miso Glaze:
- 2 tablespoons white or yellow miso paste
- 1 tablespoon soy sauce or tamari (for gluten-free)
- 1 tablespoon mirin (or rice vinegar for a tangy option)
- 1 tablespoon honey, maple syrup, or brown sugar
- 1 teaspoon sesame oil
- 1–2 tablespoons water (to adjust consistency)
- Optional Garnish:
- Sesame seeds
- Chopped fresh cilantro or green onions
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.
- Prepare the Vegetables: Toss the carrots, broccoli, and sweet potatoes in olive oil. Spread them evenly on the prepared tray.
- Make the Miso Glaze: In a mixing bowl, whisk together miso paste, soy sauce, mirin, honey (or sweetener), sesame oil, and water until smooth.
- Glaze the Vegetables: Brush the vegetables generously with the miso glaze, ensuring all sides are coated.
- Roast: Bake in the oven for 20–25 minutes, flipping halfway through to ensure even caramelization.
- Add Final Touches: Once roasted, drizzle with any remaining glaze and garnish with sesame seeds and fresh cilantro or green onions.
- Serve: Serve warm as a side dish or over a bed of rice for a complete meal.
Notes
- Adjust the sweetness and saltiness of the glaze based on your personal taste preferences.
- For a smoky twist, grill the vegetables instead of roasting them.
- Leftovers can be stored in an airtight container in the refrigerator for up to three days.
